Nose: Sweet anise, warm cinnamon bark, and rich vanilla caramel with a faint herbal mint undertone.

2021 is the year the Antique Collection came out short. With George T. Stagg held back, Thomas H. Handy was the only whiskey in the set bottled at full barrel strength. Production Methodology

Buffalo Trace distils Thomas H. Handy on its rye recipe — Minnesota rye as the large grain, Kentucky corn as the small grain, North Dakota malted barley to finish — cooked at 240 degrees, fermented sour in carbon steel, and run twice through a beer still and doubler to come off at 135 proof. The spirit entered new white oak at 125 proof, in barrels charred to a number four level for fifty-five seconds by Independent Stave. The 2021 batch matured on floors 5, 6 and 7 of warehouses I, L, O and K, where heat drives evaporation harder than it does lower down; 31% of the original volume was gone by the time the whiskey was dumped at 6 years and 4 months. Buffalo Trace's record for the batch lists filtration as none, and the bottling proof of 129.5 is what the wood gave back.

Why was there no George T. Stagg in the 2021 Antique Collection?

Buffalo Trace did not release George T. Stagg in 2021. Master Distiller Harlen Wheatley said the crop of barrels laid down in 2006 for that fifteen-year bourbon no longer matched the Stagg profile, and the distillery chose to send them back to the warehouse rather than lower its standard or dip into the next year's supply. The 2021 Buffalo Trace Antique Collection therefore shipped as four whiskeys: William Larue Weller, Thomas H. Handy Sazerac, Eagle Rare 17 Year Old and Sazerac Rye 18 Year Old.
