Buffalo Trace's 2007 fact sheet traces this batch from grain to bottle. The recipe set Minnesota rye against Kentucky corn, distillers grade #1 and #2, with North Dakota malted barley to finish; the grain went through a #10 milling screen, cooked at 240 degrees Fahrenheit in Kentucky limestone water treated by reverse osmosis, and fermented as sour mash in carbon steel and black iron fermenters. Distillation was a double run on a beer still and doubler, coming off at 135 proof and entering new white oak at 125. The barrels held 53 liquid gallons each, carried a #4 char burned for 55 seconds by Independent Stave of Lebanon, Kentucky, and aged in Warehouse K, where 51.94% of the whiskey was lost to evaporation.
