The Macallan Distil Your World Mexico is the third whisky in the Distil Your World series, made by The Macallan with the Roca brothers of El Celler de Can Roca and built around Mexico's Day of the Dead festival. Whisky Maker Diane Stuart matured it in a combination of American and European oak casks and bottled it at 48% ABV (96 proof), at a natural colour named Vibrant Marigold. It was released from November 2023.

Nº 01

The Elemental Distinction

01

Third whisky release in the Distil Your World series, after London (2020) and New York (2022), and built around a festival, the Day of the Dead, where those two took a city as their subject.

02

Created by The Macallan Whisky Maker Diane Stuart with the Roca brothers of El Celler de Can Roca, twice named the best restaurant in the world.

03

Matured in American and European oak casks that Stuart chose from The Macallan's inventory, in her words, “to find just the right flavours to reflect Mexico.”

04

Bottled at 48% ABV (96 proof) with no age statement, at a natural colour The Macallan names Vibrant Marigold, after the flower whose aroma is thought to draw the souls of the departed home.

05

Presented in a white box lined in pink, where a marigold design embraces the bottle, with artwork inside each pack by Mexican illustrator Alfredo Rios.

06

Released from November 2023 at select Macallan boutiques and specialist retailers worldwide, with a 30-minute documentary following Stuart and Joan Roca through Mexico City.

Nº 02

One City at a Time

Five cities, one series

Mexico is the third of the five Distil Your World chapters. London opened the series in 2020 and the 2022 New York bottling, second in the series, came next; after Mexico came the 46.8% Hong Kong release of 2025 and Paris in 2026. Each chapter pairs a Macallan whisky maker with the Roca brothers; for Mexico, the subject was a festival rather than a skyline.

“Mexico is full of passion and energy, and you can feel it from the moment you arrive.”

The box

White, lined in pink

The pink, The Macallan says, is inspired by the festival and its traditions and symbolises joy and the celebration of life for the souls who have passed.

Artwork inside each pack: the marigold for the hope of reunion, the guitar for the mariachi music that accompanies a soul to the afterlife, and flowers, birds, fish and hares for the cycle of life.

The Tasting Arc

The Macallan's official notes
I

Nose, Palate & Finish

Nose: Sugared pan de muerto, creamy vanilla and sweet pineapple, with fragrant marigold and a hint of fresh green coriander.
Palate: Intensely sweet, with orange oil, chocolatey Mexican mole and charred pineapple.
Finish: Sweet, with a delicate note of charred coals.

II

The Festival, Distilled

Stuart chose the casks to reflect Mexico, and the notes read like the festival table. Pan de muerto is the bread baked for the Day of the Dead and set on the ofrenda; cempasúchil, the marigold, is the flower whose aroma is thought to guide the souls home, and it gives the whisky's colour its name; mole brings chocolate and chilli together; and coriander is a staple fresh herb of the Mexican kitchen.

Collaboration & Provenance

Who they met, and what came back
→

The journey

Diane Stuart and Joan Roca travelled to Mexico City to spend time with people who carry the festival's traditions: chef and baker Elena Reygadas; Josefina García, director of collections and educational services at the Dolores Olmedo Museum, home to the largest collection of works by Diego Rivera and Frida Kahlo; and Luis Pérez, who grows marigolds in San Luis Tlaxialtemalco.

→

The kitchen: the Roca brothers

Joan, Josep and Jordi Roca, owners of El Celler de Can Roca, are The Macallan's partners across the series; Joan Roca made the Mexico City journey with Stuart. Their menu for this edition takes the colours, shapes and characters of the festival, each dish a spin on classic Mexican cuisine, with mole poblano, sugar skulls, papel picado and copal among its motifs.

Release

→

Two bottles, one cask

A single cask edition was drawn from one American oak sherry-seasoned butt, cask 1964, filled on February 10, 2005 and bottled at 54.9% ABV. Two bottles exist: the first stays in The Macallan's archive, and the second sold at Sotheby's in March 2025 for US$81,250, with the proceeds going to Esperanza International.

The estate

The Macallan, part of Edrington, was among the first Scottish distillers to be licensed, in 1824, and its 485-acre Speyside estate has been home to a new distillery since 2018.
