The Macallan Distil Your World Paris is the fifth whisky in the Distil Your World series, made by The Macallan with the Roca brothers of El Celler de Can Roca. Master Whisky Maker Kirsteen Campbell led the recipe with sherry-seasoned American oak, adding sherry-seasoned European oak, ex-bourbon casks and Cognac casks, and bottled it at 47.2% ABV (94.4 proof) at natural colour. It launched to members of The Macallan Society on February 26, 2026, with select U.S. retail from April 2026.

Paris is the fifth stop for Distil Your World. London opened the series in 2020, New York followed in 2022 and Mexico in 2023, and the ginger-and-pomelo Hong Kong chapter came in 2025. Every edition was made with the Roca brothers; for Paris, chef Anne-Sophie Pic welcomed Kirsteen Campbell and Joan Roca to the city.

Nose, Palate & Finish

Nose: Freshly baked almond croissant and rose, then sweet nectarines, sandalwood and vanilla pod.
Palate: Buttered pastry and brioche with sugared almonds, then peach melba, mille-feuille and soft toasted oak.
Finish: Gentle spices and warm oak, lingering.

Bread, Patisserie & Cask

In Kirsteen Campbell's words, “Parisian bread and patisserie take centre stage” in this whisky. The casks supply the layers beneath, and the Cognac casks, she says, lend it “an unmistakably Parisian accent.”

The film Distil Your World Paris follows the making of the whisky and of the Roca brothers' menu. On the journey, Campbell and Joan Roca met chef Anne-Sophie Pic, Apollonia Poilâne of the Poilâne bakery and Jérôme Dumant of the bistro Les Marches.

The estate on the Spey

The Macallan, part of Edrington, opened its current distillery in 2018 on its 485-acre estate on the banks of the River Spey; the house was licensed to distil in 1824.
