The Macallan Distil Your World Hong Kong is the fourth whisky in the Distil Your World series, made by The Macallan with the Roca brothers of El Celler de Can Roca. Lead Whisky Maker Euan Kennedy drew it from sherry-seasoned European oak hogsheads married with hand-selected American oak casks and bottled it at 46.8% ABV (93.6 proof), at natural colour. It reached Asia travel retail and the Asia-Pacific region from April 2025, and fewer than 500 bottles were allocated to the United States.

Fourth whisky release in the Distil Your World series, after London (2020), New York (2022) and Mexico (2023), made with the Roca brothers of El Celler de Can Roca, twice named the World's Best Restaurant, in 2013 and 2015.

Created by The Macallan's Lead Whisky Maker Euan Kennedy after exploring the city with Joan Roca; he built the recipe around structure and contrast, both drawn from Hong Kong.

Drawn from sherry-seasoned European oak hogsheads, which The Macallan credits with the whisky's foundational dried-spice flavours, married with hand-selected American oak casks.

Bottled at 46.8% ABV (93.6 proof) with no age statement, naturally dark and at natural colour, which The Macallan names Victoria Harbor Sunset.

Announced April 1, 2025 as a limited release for Asia travel retail and the Asia-Pacific region, with Hong Kong, Taiwan, China and Singapore named as its four key markets.

Accompanied by a film episode, “Reimagining Spaces,” and a menu the Roca brothers drew from Hong Kong's own table.

One city per edition

Distil Your World turns one city into one single malt: London in 2020, New York in 2022, Mexico in 2023, Hong Kong in 2025 and Paris in 2026. Hong Kong is the fourth stop. The chapter before it is the Day of the Dead edition of 2023, and the one after it is the Cognac-cask Paris edition of 2026. Each was made with the Roca brothers, and each had a different Macallan whisky maker.

Nose, Palate & Finish

Nose: Resinous and sweet: ginger and spice, pomelo and mango, then Hong Kong-style egg tart, fragrant honey and antique oak.
Palate: Viscous and mouth-coating, with tropical sweetness, ginger and rounded spices, aged oak, grapefruit and an umami-like depth.
Finish: Antique oak carries through to the end.

The City, Distilled

Kennedy ties the ginger and cinnamon to the city's culinary heritage and street markets, and the pomelo, mango and fragrant honey to its energy, creativity and cutting-edge spirit; the umami, he says, is a subtle but central part of the whisky's depth. The Macallan's palate note credits the ginger and rounded spices with the whisky's structure, and structure is what Kennedy set out to build, to reflect a city rising from the sea to the peaks.

The Macallan's Lead Whisky Maker explored Hong Kong with Joan Roca, then composed the recipe from sherry-seasoned European oak hogsheads and American oak casks around the ideas of structure and contrast.

The kitchen: the Roca brothers

Joan, Josep and Jordi Roca, The Macallan's long-standing partners in the series, created the menu for this edition. It opens with a yum cha aperitif: Casa Cacao blend tea, rose ha gau, scallop and sea urchin cheung fun, and truffle cha siu bao.

Released in Asia travel retail and the Asia-Pacific region from April 2025. For the United States, fewer than 500 bottles went to private clients by pre-sale from April 2025, with national distribution following from September 2025.

The estate

The Macallan Distillers Ltd, part of Edrington, was licensed to distil in 1824 and works from a 485-acre estate in Speyside, where its current distillery opened in 2018.
