That marriage then moves into port pipes — large casks, typically several times the size of a barrel, previously filled with port. The Malt Master samples the finishing casks and pulls the whisky when the wine influence is balanced against the distillery character rather than layered over it. Balvenie remains one of the few Scottish distilleries running its own floor maltings and cooperage at Dufftown. The US bottling is 43% ABV.

A pipe is the traditional Portuguese cask for maturing port, and it is considerably larger than a standard whisky barrel — several hundred litres against under two hundred. The extra volume means less wood contact per litre of whisky, so the finish works slowly and adds fruit and nuttiness without the oak tannin a smaller cask would push into a whisky already twenty-one years old.
