Sixteen barrels and no peat: Ichiro's Malt Chichibu The US Edition 2024 vats fifteen ex-bourbon barrels and one refill sherry hogshead of whisky four to ten years old, two of the bourbon barrels holding spirit from barley floor malted at the distillery. Bottled at 52.5% ABV, or 105 proof, it ran to 3,036 bottles for the United States under a label showing Steamboat Willie with a dram.

The Elemental Distinction

Fifteen bourbon barrels, one sherry hogshead. Ex-bourbon wood makes up fifteen of the sixteen barrels; the sixteenth is a refill sherry hogshead.

Floor malt in two barrels. Two of the bourbon barrels hold whisky made from barley floor malted at Chichibu — steeped, spread on a floor and left to germinate, a slow and labor-heavy method.

Unpeated. The barley was unpeated, by both specification sheets, after the heavily peated 2023 edition.

Four to ten years old. The whisky in the sixteen barrels ranged from four to ten years of age, by both specification sheets.

3,036 bottles. The US release reached 3,036 bottles, the largest of the first seven US Editions.

Floor Malting

Floor malting starts with barley soaked in water, spread across a concrete floor and turned by hand while it germinates. Chichibu keeps a floor maltings of its own, and High Road Spirits notes that the method is uncommon even among many Scotch distilleries: the work is laborious, less efficient and has to be adjusted to the temperature of the room. For 2024, two of the bourbon barrels in the vatting held whisky made this way.

High Road Spirits finds fruit, spice and confectionery layered through the 2024 vatting. With unpeated malt, fifteen ex-bourbon barrels and a single refill sherry hogshead, the edition leans on bourbon oak, and its 52.5% ABV is the lowest strength of the series to that point.

Strategic Position

After the heavily peated 2023 edition built on new French oak, the 2024 bottling dropped peat and went back to bourbon barrels, with a strength of 52.5%. The lightly peated 2025 edition partly matured in IPA and imperial stout casks kept that strength.

Production Methodology

Chichibu fermented 100% unpeated malted barley for 100 hours in Mizunara oak washbacks and double distilled it in Forsyths copper pot stills. Sixteen barrels — fifteen ex-bourbon, two of them holding whisky from floor-malted barley, and one refill sherry hogshead — were vatted at four to ten years old and bottled at 52.5% ABV, non-chill-filtered and with no added coloring.
