The Elemental Distinction

Two releases in 2005. The spring release came in two lots, at 130.9 and 131.8 proof; this fall bottling was the year's second, and at 141.2 proof it outran both.

Spring 1990 whiskey. At bottling it was 15 years and 4 months old, a year and four months younger than the spring 1988 whiskey in the spring lots.

One warehouse, three floors. Every barrel came out of Warehouse I, from its second, fourth and eighth floors.

The start of a run. Above 140 proof from here on: no George T. Stagg release through 2012 came in under that line, while the spring lots before it had.

On the label. Uncut/Unfiltered sits over 70.6% Alc. by Vol. and 141.2 Proof, with Limited Edition printed up the left edge.

Spring and Fall, 2005

Two letters, two releases

Two letters about George T. Stagg went out from Buffalo Trace in 2005. The March 1 letter described barrels more than 16 years and 8 months old whose proof varied slightly, so the spring release went out in two versions, Lot A at 130.9 proof and Lot B at 131.8, both from spring 1988 whiskey drawn from Warehouse Q. The September 20 letter introduced this bottling, from younger spring 1990 whiskey, at 141.2 proof.

Buffalo Trace's sheet, line by line

Grain

Corn, rye, malted barley

The large grain is Kentucky corn of distillers grades #1 and #2; the small grain Minnesota rye and the finish grain North Dakota malted barley, as the sheet labels them. The grain went through a #10 screen and was cooked at 240°F, with Kentucky limestone water run through reverse osmosis.

Mash & Still

Sour mash, two distillations

The spring 1990 sour mash fermented in carbon steel and black iron vessels, then went through a beer still and a doubler; 135 proof was its strength off the still.

Barrel

Independent Stave, #4 char

The cooper was Independent Stave of Lebanon, Kentucky: new white oak with a #4 char fired for 55 seconds, holding 53 liquid gallons and filled at 125 proof.

Evaporation

58.59% of the whiskey

That share of the original whiskey had evaporated by the time these barrels were bottled at 15 years and 4 months.
