Every expression in the Aged Series starts from the same place as the standard bottling: a mash of 80% corn, 12% malted barley and 8% rye, distilled and then filtered through ten feet of sugar-maple charcoal before it ever reaches a barrel. That charcoal-mellowing step is the Lincoln County Process, and it is what separates Tennessee whiskey from bourbon as a legal category rather than anything in the recipe. The whiskey then matures in new American white oak in the Lynchburg rickhouses, where floor position and seasonal temperature swing set the pace of extraction. Time is the only variable the series changes.
