The Macallan Harmony Collection Fine Cacao is the travel-retail half of Harmony I, bottled at 40% ABV from a combination of European and American oak casks. It premiered at The Macallan's airport boutiques in May 2022 and reached global travel retail that June. Same collaboration as Rich Cacao — Whisky Maker Polly Logan with pastry chef Jordi Roca — pitched at a lighter chocolate profile.

Cask & Craft

Collection Fine Cacao

Duty-free and travel retail operate as a distinct commercial channel with their own buyers, their own pricing and their own duty treatment, and producers build for it accordingly. Exclusive expressions are the norm rather than the exception: a parallel bottling lets a distillery serve the channel without discounting its domestic range, and the lower strengths common in travel retail reflect both duty calculations in some markets and a brief aimed at a broader, less specialist buyer. Fine Cacao follows that pattern precisely — 40% against the domestic 44%, released a few months later, in the 70cl European measure. What it does not do is cut corners on the whisky: it draws on the same European and American oak combination and the same Roca collaboration that produced its domestic twin.

Sensory Profile & Strategy

Distiller notes & position
I

Sensory Profile

The lighter half of the pair: Macallan positioned Fine Cacao as elegant and medium in chocolate character where Rich Cacao is indulgent and rounded. Same brief, two intensities, deliberately.
Where the character comes from: A combination of European and American oak. No flavouring is possible in Scotch single malt, so the cacao note is cask work here as it is on the domestic release.
What is documented: 40% ABV, European and American oak, a May 2022 travel-retail premiere, and the Roca collaboration shared with Rich Cacao.

II

Strategic Position

Travel retail is a genuinely separate market, not a shelf in an airport. It has its own distribution, its own pricing, its own regulatory treatment and its own volume economics, and distilleries build parallel expressions for it that never appear domestically. Fine Cacao is one of those — a lower-strength counterpart released a few months after its domestic twin, into a channel most buyers only pass through. For anyone assembling the Harmony Collection outside a duty-free hall, the travel-retail halves are the difficult six. It sits with the travel-retail bottlings in our vault, alongside the 44% domestic cacao release.

Collector Note

Two things make this harder to buy well than its domestic twin. It was never sold outside travel retail, so ordinary retail scarcity reasoning does not apply — availability depends on which airport halls stocked it and what came home in luggage, which is why supply outside Europe and Asia is thin and uneven. And it is a 70cl bottle, the European measure, not the 750ml a US buyer expects; that is normal for travel retail and it is worth knowing before comparing prices per bottle against domestic releases. On the naming, be careful. Rich Cacao and Fine Cacao are different whiskies at different strengths from the same collaboration, and listings shorten both to "Harmony Cacao" often enough that the full name is the only safe thing to buy on. The coffee release that followed repeated the same domestic and travel-retail split.

How to Taste It

Neat, and do not add water. At 40% this is the lowest-strength release in the Harmony Collection and there is no headroom — dilution takes it somewhere thin rather than opening it up, which is the opposite of how the barrel-strength bottles in most collections behave. Serve it slightly cool rather than cold if the room is warm. It is also the one to pour for anyone who found the 44% domestic release heavy going: the whole point of the pairing was two intensities of one idea, and this is the restrained end of it by design rather than by compromise.

Frequently Asked Questions

What is the difference between Macallan Rich Cacao and Fine Cacao?

Strength and market. Both come from the same Harmony I collaboration between Whisky Maker Polly Logan and pastry chef Jordi Roca. Rich Cacao was the domestic release at 44% ABV with what Macallan describes as indulgent chocolate notes; Fine Cacao is the travel-retail exclusive at 40% ABV, drawn from a combination of European and American oak, with a lighter medium chocolate profile.

Where can you buy Macallan Harmony Collection Fine Cacao?

It was released only through travel retail. Fine Cacao premiered at The Macallan's airport boutiques in May 2022 and reached global travel retail in June 2022, and it was never sold as a domestic release. Bottles appearing outside that channel have generally come home from duty-free rather than from ordinary retail distribution.

What size is the Fine Cacao bottle?

70cl, the European measure, rather than the 750ml standard US format. That is typical of travel-retail bottlings and worth checking before comparing prices against domestically released whiskies, which in the United States will usually be 750ml.
