Ichiro's Malt Chichibu The US Edition 2020 puts peat first: the malt was peated to 30 parts per million, and the box label carries the word Peated above the edition name. Ten casks — bourbon and ex-bourbon barrels, ex-chibidaru and an ex-wine cask — gave 2,109 bottles of five-year-old whisky at 55.5% ABV, bottled without chill filtration or caramel coloring.

Four kinds of cask. The label lists four bourbon barrels, three ex-bourbon barrels, two ex-chibidaru — chibidaru are the small casks Chichibu uses — and one cask that previously held wine.

Five years, no chill filtration. High Road Spirits gives its age as five years and lists it as bottled without chill filtration or caramel coloring.

A new class line. The 2020 label reads Single Malt Japanese Whisky, where the 2018 and 2019 boxes read Single Malt Whisky.

The Still House

Mizunara washbacks · 2,000-liter stills

The specification High Road Spirits published for this edition also records how Chichibu makes its spirit: eight washbacks of Mizunara oak, pot stills of 2,000 liters heated indirectly, and shell-and-tube condensers. Distilling at Chichibu started in 2008; a second distillery, Chichibu II, followed in 2019.

Where the 2019 bottling held peat in two of its seven casks, the 2020 label calls the whole edition Peated, with the malt at 30 ppm. The whisky spent five years in bourbon and ex-bourbon barrels, ex-chibidaru and an ex-wine cask, and went into bottle at 55.5% ABV without chill filtration or caramel coloring.

Strategic Position

Peat was already in the 2019 vatting of Tipple, Braemar and Concerto, through its two Concerto casks; in 2020 it became the subject of a whole release. Fresh oak came next, and the 2021 bottling of new barrels, new hogsheads and first-fill bourbon also moved the series to 700 mL.

Production Methodology

The malt for this edition was peated to 30 ppm. Chichibu fermented it in Mizunara washbacks, distilled it in 2,000-liter pot stills heated indirectly, and filled ten casks — bourbon and ex-bourbon barrels, ex-chibidaru and one former wine cask. After five years the casks were vatted and bottled at 55.5% ABV for the United States, without chill filtration or caramel coloring.
