Two consecutive George T. Stagg releases were distilled in the same season. The fall 2005 bottling and this one both carry spring 1990 on their fact sheets, and both were drawn from Warehouse I: floors 2, 4 and 8 for the 2005, the eighth floor alone for the 2006. Eleven months older, the 2006 was bottled at 140.6 proof against the 2005's 141.2, from 89 barrels where the 2005 had 95.

One line of tasting comment sits on the 2006 fact sheet: “Like a big chunk of dark chocolate”. The sheet for the fall 2005 release, the other spring 1990 Stagg, said “Rich, chocolate, chewy”, so chocolate runs through both.

Strategic Position

Compare it first with the fall 2005 release at 141.2 proof, distilled the same spring, then with the 2008 Stagg from spring 1993 distillate, bottled two years later at 141.8 proof. In 2006 Buffalo Trace also issued Handy's first rye release, at 132.7 proof.

Production Methodology

The 2006 sheet traces the whiskey step by step. Its sour mash combined Kentucky corn, Minnesota rye and North Dakota malted barley, ground through a #10 screen and cooked at 240°F in reverse-osmosis-treated Kentucky limestone water, then fermented in carbon steel and black iron vessels. A beer still and a doubler took it to 135 proof; it was barreled at 125 proof in new Independent Stave white oak given a #4 char over 55 seconds. No filtration and no water came between barrel and bottle.
